biscuits and gravy - so easy!!

I'm a Yankee living in the South. There were a few cultural adjustments I had to get used to living in Texas; like people are always nice. What is that about. The politics... the driving (like seriously- you've never seen rain before?). But what I can definitely get on board with is biscuits and gravy!!! Where have you been all my life?  I make this on the regular. Try it once and I guarantee you will too:

INGREDIENTS

• 8 ounces hot sausage
• 2 tablespoons butter
• 2 tablespoons flour
• 2 cups of milk

INSTRUCTIONS

1. Cook sausage in a large skillet until browned.
   
2. Remove to a paper towel-lined plate.
   
3. Whisk butter and flour until the roux is well combined and smooth.
   
4. Stirring constantly, add milk.
   
5. Bring to a summer, whisking for 5 minutes or until thickened.
   
6. Add sausage back to the pan and serve over biscuits (I sometimes buy canned biscuits, but homemade biscuits are my preference by far. I typically make Lisa Leake's Whole Wheat Biscuit Recipe.
